In our country, red beetroot is used industrially only for pickling. Red beetroot is used as a natural food coloring with its very rich and beautiful substance. It is known that people have known and consumed beetroot since ancient times. In the beginning, red and yellow colored beets in the form of today’s sugar beet were produced, but later they were replaced by varieties that produced round and flattened shaped beets. Due to the difficulty of washing and peeling these beets, varieties that form beets on the soil were later developed. Thus, the losses incurred were eliminated. Varieties containing more color pigments were developed through selection and breeding. The most recent development in beetroot has been to replace round varieties with cylindrical shaped varieties that are easy to process, give little waste and can obtain standard rings. We do not think that beet and consumption production will increase significantly in our country. Therefore, it is also not possible to think that its economic importance will increase. It is estimated that production will remain at current levels. The Mediterranean coastal cities, the Aegean Sea, Western Anatolia, India and the steppes of Central Asia are considered to be the homeland of beet. In our country, wild beets are found in almost all regions and in this respect, beet shows a great richness of forms. Among these forms, forms flowering from the 1st, 2nd, 3rd and 4th year are encountered, as well as forms that form red or yellow colored beets. Wild forms also show a great richness of forms in terms of beet and root characteristics. The root is branched in wild forms. The plant is affected by high humidity during the development period. Irrigation with sprinkler system affects plant development positively. For this reason, sprinkler irrigation is generally preferred in beet cultivation. In addition, keel irrigation is also used extensively. Recently, drip irrigation method has also started to be used.
